1 whole chicken breast ( skinned and boned )
From top of chicken breast sliced through middle to make 2 big piece ( marinate with a sprinkle of salt and flavor )
Break 1 egg in chicken breast and mixed well
Coat in potato starch
Ensure oil is at high temperature ( about 360 f )
Gently place chicken in oil. Turn gas down to medium heat and deep fry for 3 minutes
Take out and leave it to cooled down
6oz lemon cordial
2 table spoon sugar
1 table spoon of vinegar
few drop of yellow colour
Put above ingredients in a pan and bring it to boiled and turn heat down.
Thicken the sauce with 10g potato mix with 20g cold water and slowly stirred in (you may not need to add all of the starch).
Sliced the chicken into small pieces and placed it on a bed of lettuce. Pour the lemon sauce on top and garnished with few slices of fresh lemon.
